From Food Truck to Full Bar — The Cut's Evolution
In 2014, The Cut was just an idea on wheels — a humble food truck built on three principles: Quality. Freshness. Hospitality. With nothing but a flat-top and a mission to make burgers better, we hit the streets and never looked back.
By 2017, we found our first home in Irvine, CA — and with it came cocktails, brunch, and a cult following. Through a pandemic, we persevered. In 2022, with Executive Chef & Partner Ryan Yi stepping in, we doubled down on what we do best: elevated, handcrafted food with heart.
And now, with our newest home in Rancho Cucamonga, we've evolved again.
This isn't just a burger joint. It's a full-service American restaurant & bar with modern American flavors, scratch techniques, a craft cocktail program, and a commitment to doing things the right way — no matter how much work it takes.
We're proud to be serving Victoria Gardens with the same heart that built us — now with a little extra polish.
